- 1 lb chicken breast, diced
- 1 ripe mango, pureed
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon sriracha
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- Salt and pepper to taste
- 1 tablespoon olive oil
- Chopped cilantro for garnish
Instructions
- In a bowl, combine the mango puree, soy sauce, honey, sriracha, minced garlic, grated ginger, and season with salt and pepper. Stir to combine.
- Add the diced chicken to the bowl and coat each piece in the marinade. Marinate for at least 30 minutes in the fridge.
- Heat olive oil in a skillet over medium-high heat until hot and shimmering.
- Add the marinated chicken to the skillet and sauté for about 6-8 minutes until fully cooked and golden brown.
- Remove from heat and garnish with chopped cilantro. Serve and enjoy!
Notes
For a spicier kick, add extra sriracha to the marinade. Use a ripe mango for the best flavor.
