Ingredients
- Salmon Fillets: About 1.5-2 pounds, skin on or off
- Olive Oil: 3 tablespoons, extra virgin
- Lemon: 1 large, zested and juiced
- Garlic: 3 cloves, minced
- Dried Italian Herb Blend: 2 tablespoons
- Fresh Parsley: 2 tablespoons, chopped
- Salt: 1 teaspoon, or to taste
- Black Pepper: ½ teaspoon, freshly ground, or to taste
Instructions
- Preheat the oven to 400°F (200°C) and prepare a baking sheet.
- Whisk together the olive oil, lemon zest, lemon juice, minced garlic, dried Italian herb blend, chopped parsley, salt, and pepper in a small bowl.
- Place the salmon fillets on the prepared baking sheet and pat them dry with paper towels.
- Pour the herb mixture over the salmon, ensuring each fillet is coated. Marinate for 10-15 minutes if possible.
- Transfer the baking sheet to the preheated oven and bake for about 12-15 minutes.
- Switch to broil for the last 1-2 minutes for a golden finish if desired.
- Remove from the oven and garnish with extra parsley and lemon wedges before serving.
