Delicious and crispy Italian rice balls filled with cheese, perfect for appetizers or snacks.
Ingredients

- 2 cups cooked rice
- 1/2 cup grated Parmesan cheese
- 1/2 cup mozzarella cheese, diced
- 1/2 cup breadcrumbs
- 1 large egg
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Oil for frying
Instructions
- In a large bowl, combine the cooked rice, grated Parmesan cheese, diced mozzarella cheese, breadcrumbs, egg, garlic powder, Italian seasoning, salt, and pepper.
- Using your hands, mix everything until well combined for a cohesive mixture.
- Scoop out portions of the mixture and roll them into small balls, about the size of a golf ball.
- In a frying pan, heat enough oil over medium heat so that the rice balls can float slightly.
- Carefully add the rice balls to the hot oil and fry until golden brown on all sides, about 5-7 minutes.
- Using a slotted spoon, remove the rice balls from the oil and place them on a plate lined with paper towels to drain.
- Serve hot and enjoy!
Notes
For variations, consider adding chopped spinach or cooked sausage, and serve with marinara or spicy aioli.
