Description

Delicious and crispy Italian rice balls filled with cheese, perfect for appetizers or snacks.


Ingredients

Scale
  • 2 cups cooked rice
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup mozzarella cheese, diced
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. In a large bowl, combine the cooked rice, grated Parmesan cheese, diced mozzarella cheese, breadcrumbs, egg, garlic powder, Italian seasoning, salt, and pepper.
  2. Using your hands, mix everything until well combined for a cohesive mixture.
  3. Scoop out portions of the mixture and roll them into small balls, about the size of a golf ball.
  4. In a frying pan, heat enough oil over medium heat so that the rice balls can float slightly.
  5. Carefully add the rice balls to the hot oil and fry until golden brown on all sides, about 5-7 minutes.
  6. Using a slotted spoon, remove the rice balls from the oil and place them on a plate lined with paper towels to drain.
  7. Serve hot and enjoy!

Notes

For variations, consider adding chopped spinach or cooked sausage, and serve with marinara or spicy aioli.
