Description

A quick and satisfying stir-fry featuring chicken, vibrant vegetables, and a zesty kick from jalapeños.


Ingredients

  • 2 chicken breasts, sliced
  • 2 tablespoons olive oil
  • 2 jalapeños, sliced
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the sliced chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Add the sliced jalapeños, bell pepper, onion, and garlic to the skillet. Stir-fry for another 5-7 minutes until the vegetables are tender.
  4. Pour in the soy sauce and lime juice, stirring to combine thoroughly.
  5. Season with salt and pepper to taste, adjusting flavors as desired.
  6. Serve hot, garnished with fresh cilantro for a pop of color and flavor.

Notes

For extra flavor, marinate the chicken in soy sauce and lime juice for 15-30 minutes prior to cooking. Swap in any vegetables you have on hand.
