Ingredients

- 2 cups all-purpose flour
- 1 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup brewed coffee (cooled)
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease or line a muffin tin.
- In a large bowl, combine flour, sugar, baking powder, and salt.
- In another bowl, whisk together the cooled coffee, vegetable oil, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients, stirring gently until just combined.
- Fold in chocolate chips if using.
- Divide the batter among the muffin cups, filling them about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Allow to cool slightly in the pan before transferring to a wire rack.
Notes
Store in an airtight container for up to 3 days or freeze for up to 3 months. Serve warm.
