- 1 lb ground beef
- 1 onion, chopped
- 1 can (15 oz) pinto beans, drained
- 1 can (15 oz) diced tomatoes with green chilies
- 1 packet taco seasoning
- 1 cup corn
- 1 cup shredded cheddar cheese
- 1 can (8 oz) crescent roll dough
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, combine the ground beef and chopped onion over medium heat. Cook until the beef is browned and the onion is translucent. Drain excess fat.
- Stir in the drained pinto beans, diced tomatoes, taco seasoning, and corn. Cook for about 5 minutes.
- Transfer the mixture to a greased 9×13-inch baking dish.
- Unroll the crescent roll dough and cover the meat mixture with it.
- Sprinkle the shredded cheddar cheese on top.
- Bake in the preheated oven for 25-30 minutes until golden brown.
- Cool for a few minutes before slicing and serving.
Notes
Feel free to swap ground beef with turkey or chicken for a lighter option. You can also add more veggies like bell peppers or jalapeños.
