Description

A hearty casserole featuring seasoned beef, beans, and gooey melted cheese, perfect for family dinners or gatherings.


Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 can (15 oz) pinto beans, drained
  • 1 can (15 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup corn
  • 1 cup shredded cheddar cheese
  • 1 can (8 oz) crescent roll dough

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, combine the ground beef and chopped onion over medium heat. Cook until the beef is browned and the onion is translucent. Drain excess fat.
  3. Stir in the drained pinto beans, diced tomatoes, taco seasoning, and corn. Cook for about 5 minutes.
  4. Transfer the mixture to a greased 9×13-inch baking dish.
  5. Unroll the crescent roll dough and cover the meat mixture with it.
  6. Sprinkle the shredded cheddar cheese on top.
  7. Bake in the preheated oven for 25-30 minutes until golden brown.
  8. Cool for a few minutes before slicing and serving.

Notes

Feel free to swap ground beef with turkey or chicken for a lighter option. You can also add more veggies like bell peppers or jalapeños.
