Ingredients

  • 4 turkey legs
  • 1 teaspoon saffron threads
  • 1 cup orange juice
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, steep saffron threads in warm orange juice for about 10 minutes.
  3. In a large bowl, combine olive oil, minced garlic, salt, black pepper, paprika, chopped rosemary, and thyme. Stir in the saffron-infused orange juice.
  4. Add the turkey legs to the bowl and coat them with the marinade. Let them marinate for at least 30 minutes.
  5. Place the marinated turkey legs in a roasting pan and pour remaining marinade over them.
  6. Roast in the preheated oven for 1.5 to 2 hours until the internal temperature reaches 165°F (74°C).
  7. Remove from the oven and let the turkey legs rest for about 10 minutes before serving.

Notes

For extra crispy skin, consider broiling the turkey legs for the final few minutes of cooking.
