Description

A perfectly roasted chicken infused with garlic, lemon, and earthy herbs, ideal for family gatherings.


Ingredients

  • 1 whole chicken (about 45 pounds)
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 teaspoons dried oregano
  • 2 teaspoons dried thyme
  • 1 teaspoon garlic powder
  • 1 lemon, sliced
  • 4 cloves garlic, minced
  • Fresh rosemary sprigs
  • Vegetables for roasting (such as carrots, potatoes, and bell peppers)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a small bowl, mix together the olive oil, salt, black pepper, oregano, thyme, and garlic powder.
  3. Rub the mixture all over the chicken, including under the skin.
  4. Stuff the cavity of the chicken with lemon slices, minced garlic, and fresh rosemary.
  5. Place the chicken in a roasting pan and surround it with chopped vegetables.
  6. Roast in the preheated oven for about 90 minutes or until the internal temperature reaches 165°F (75°C).
  7. Let the chicken rest for 10-15 minutes before carving and serving.

Notes

Use a meat thermometer to ensure perfect cooking. Feel free to use alternative vegetables based on your preference.
