Ingredients

- 1 whole chicken (about 4–5 pounds)
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 2 teaspoons dried oregano
- 2 teaspoons dried thyme
- 1 teaspoon garlic powder
- 1 lemon, sliced
- 4 cloves garlic, minced
- Fresh rosemary sprigs
- Vegetables for roasting (such as carrots, potatoes, and bell peppers)
Instructions
- Preheat your oven to 425°F (220°C).
- In a small bowl, mix together the olive oil, salt, black pepper, oregano, thyme, and garlic powder.
- Rub the mixture all over the chicken, including under the skin.
- Stuff the cavity of the chicken with lemon slices, minced garlic, and fresh rosemary.
- Place the chicken in a roasting pan and surround it with chopped vegetables.
- Roast in the preheated oven for about 90 minutes or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 10-15 minutes before carving and serving.
Notes
Use a meat thermometer to ensure perfect cooking. Feel free to use alternative vegetables based on your preference.
