Ingredients

  • 4 medium zucchinis
  • 8 slices of bacon
  • 1 cup shredded cheese (e.g., cheddar or mozzarella)
  • 1/2 cup cream cheese
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • Olive oil (for drizzling)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the zucchinis in half lengthwise and scoop out the insides to create boats.
  3. In a mixing bowl, combine the cream cheese, shredded cheese, and green onions. Season with salt and pepper to taste.
  4. Generously fill each zucchini boat with the cheese mixture.
  5. Wrap each zucchini boat with a slice of bacon.
