Description

Delicious low-carb breadsticks made from riced cauliflower, cheese, and garlic, perfect for dipping or as a snack.


Ingredients

Scale
  • 1 large cauliflower, riced
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley (optional)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Steam the riced cauliflower until tender, about 5-7 minutes. Let it cool slightly, then squeeze out excess moisture with a clean towel.
  3. Combine the riced cauliflower, mozzarella cheese, Parmesan cheese, eggs, minced garlic, Italian seasoning, salt, and pepper in a bowl. Mix until well combined.
  4. Shape the mixture onto the prepared baking sheet to form a rectangle about 1/2 inch thick.
  5. Bake for 15-20 minutes or until golden brown.
  6. Cool slightly, then slice into sticks.
  7. Garnish with fresh parsley before serving if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave.
