Description

A heartwarming Lamb & Apricot Stew blending sweet apricots and tender lamb for a comforting dish, perfect for gatherings.


Ingredients

  • 2 lbs lamb, cut into chunks
  • 1 cup dried apricots
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 carrots, sliced
  • 1 can (14 oz) diced tomatoes
  • 4 cups beef broth
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the lamb chunks and brown them on all sides.
  2. Remove the browned lamb and set it aside. In the same pot, add the chopped onion and minced garlic, sautéing until softened and fragrant.
  3. Stir in the carrot slices, cumin, coriander, salt, and pepper.
  4. Return the lamb to the pot, then add the dried apricots, diced tomatoes, and beef broth. Stir to combine.
  5. Bring to a simmer, cover, and cook for 1.5 to 2 hours, or until the lamb is tender.
  6. Serve hot, garnished with fresh parsley.
