- 2 lbs lamb, cut into chunks
- 1 cup dried apricots
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 carrots, sliced
- 1 can (14 oz) diced tomatoes
- 4 cups beef broth
- 1 tsp ground cumin
- 1 tsp ground coriander
- Salt and pepper to taste
- Olive oil for cooking
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add the lamb chunks and brown them on all sides.
- Remove the browned lamb and set it aside. In the same pot, add the chopped onion and minced garlic, sautéing until softened and fragrant.
- Stir in the carrot slices, cumin, coriander, salt, and pepper.
- Return the lamb to the pot, then add the dried apricots, diced tomatoes, and beef broth. Stir to combine.
- Bring to a simmer, cover, and cook for 1.5 to 2 hours, or until the lamb is tender.
- Serve hot, garnished with fresh parsley.
