- 500g lamb, diced
- 2 large onions, finely chopped
- 4 cloves garlic, minced
- 1 inch ginger, grated
- 2 tomatoes, chopped
- 2 tablespoons vegetable oil
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1 teaspoon turmeric powder
- 2 green chilies, slit
- Salt to taste
- Fresh coriander for garnish
Instructions
- Heat the oil in a large pan over medium heat. Add cumin seeds and let them sizzle.
- Add the chopped onions and cook until golden brown.
- Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
- Add the lamb pieces to the pan, browning them on all sides.
- Mix in the chopped tomatoes, coriander powder, turmeric, and green chilies.
- Cover the pan and let the lamb simmer for about 30-40 minutes.
- Once the lamb is tender, stir in the garam masala and salt.
- Cook for another 5 minutes, allowing the spices to meld.
- Garnish with fresh coriander before serving.
Notes
For added flavor, marinate the lamb in yogurt and spices for a few hours before cooking.
