Description

Transform leftover mashed potatoes into delicious cheese puffs that are crispy on the outside and soft on the inside.

Ingredients

Scale
  • 2 cups leftover mashed potatoes
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup all-purpose flour
  • 1/4 cup green onions, chopped
  • 1 egg
  • Salt and pepper to taste
  • Oil for frying (or cooking spray for baking)

Instructions

  1. Preheat the oven to 400°F (200°C) if you choose to bake these delightful puffs. Grease a baking sheet to ensure they don’t stick later.
  2. Mix the ingredients in a large mixing bowl by combining leftover mashed potatoes, shredded cheese, all-purpose flour, chopped green onions, egg, and seasoning with salt and pepper.
  3. Shape the mixture into small balls or patties, about the size of a golf ball.
  4. Choose your cooking method: bake on the prepared sheet for 15-20 minutes until golden or fry in heated oil for 3-4 minutes on each side until crispy.
  5. Serve warm with your favorite dipping sauce.

Notes

These puffs can be stored for up to three days in the refrigerator or frozen for up to one month. Reheat in the oven or fry from frozen until heated through.
