Delicious bars combining creamy cheesecake filling with fresh blueberries and a buttery graham cracker crust.

- 1 cup graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
- 8 oz cream cheese, softened
- 2/3 cup sugar
- 1/4 cup lemon juice
- 1 teaspoon vanilla extract
- 2 cups fresh blueberries
- 1 egg
Instructions
- Preheat the oven to 350°F (175°C). Grease an 8×8 inch baking dish.
- In a bowl, combine the graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of the prepared baking dish.
- In another bowl, beat the softened cream cheese until smooth. Add 2/3 cup sugar, lemon juice, and vanilla; mix until combined.
- Add an egg to the cream cheese mixture and mix until fully incorporated.
- Gently fold in the blueberries.
- Pour the cream cheese mixture over the crust. Smooth with a spatula and bake for 25-30 minutes.
- Allow to cool at room temperature, then refrigerate for at least 2 hours before cutting into bars.
Notes
For an extra zing, add lemon zest to the filling.
