Description

Delicious bars combining creamy cheesecake filling with fresh blueberries and a buttery graham cracker crust.


Ingredients

Scale
  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 8 oz cream cheese, softened
  • 2/3 cup sugar
  • 1/4 cup lemon juice
  • 1 teaspoon vanilla extract
  • 2 cups fresh blueberries
  • 1 egg

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8 inch baking dish.
  2. In a bowl, combine the graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of the prepared baking dish.
  3. In another bowl, beat the softened cream cheese until smooth. Add 2/3 cup sugar, lemon juice, and vanilla; mix until combined.
  4. Add an egg to the cream cheese mixture and mix until fully incorporated.
  5. Gently fold in the blueberries.
  6. Pour the cream cheese mixture over the crust. Smooth with a spatula and bake for 25-30 minutes.
  7. Allow to cool at room temperature, then refrigerate for at least 2 hours before cutting into bars.

Notes

For an extra zing, add lemon zest to the filling.
