- 4 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- Salt and pepper to taste
- 4 tablespoons olive oil
- 4 tablespoons unsalted butter
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- 1/4 cup capers
- 2 tablespoons fresh parsley, chopped
Instructions
- Prepare the chicken by seasoning the breasts with salt and pepper. Dredge them in flour, shaking off the excess.
- Sauté the chicken in a large skillet with olive oil and 2 tablespoons of butter over medium-high heat until golden brown, about 4-5 minutes per side. Remove the chicken and set aside.
- Create the sauce by adding chicken broth, lemon juice, and capers to the same skillet and bring to a simmer.
- Simmer the chicken back in the sauce for another 3-4 minutes to infuse with flavors.
- Enrich the dish by stirring in the remaining butter and sprinkling with fresh parsley just before serving.
Notes
Make sure not to overcrowd the pan for perfect searing. Let the chicken rest after cooking to retain juiciness.
