Ingredients

  • 1 lb shrimp, peeled and deveined
  • 8 oz orzo pasta
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 lemon, juiced
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat until shimmering.
  2. Add the minced garlic to the skillet and sauté until fragrant, about 1 minute.
  3. Cook the shrimp, seasoning with salt and pepper, until pink and opaque, about 3-4 minutes.
  4. Meanwhile, cook the orzo according to package instructions, then drain.
  5. Mix the cooked orzo with shrimp, spinach, and lemon juice.
  6. Cook for an additional 2 minutes until the spinach wilts.
  7. Serve warm, optionally topped with Parmesan cheese.

Notes

For added spice, consider adding a pinch of red pepper flakes when sautéing the garlic. Store leftovers in an airtight container in the fridge for up to 3 days.
