- 1 lb shrimp, peeled and deveined
- 8 oz orzo pasta
- 2 cups fresh spinach
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 lemon, juiced
- Salt and pepper to taste
- Parmesan cheese for serving (optional)
Instructions
- Heat the olive oil in a large skillet over medium heat until shimmering.
- Add the minced garlic to the skillet and sauté until fragrant, about 1 minute.
- Cook the shrimp, seasoning with salt and pepper, until pink and opaque, about 3-4 minutes.
- Meanwhile, cook the orzo according to package instructions, then drain.
- Mix the cooked orzo with shrimp, spinach, and lemon juice.
- Cook for an additional 2 minutes until the spinach wilts.
- Serve warm, optionally topped with Parmesan cheese.
Notes
For added spice, consider adding a pinch of red pepper flakes when sautéing the garlic. Store leftovers in an airtight container in the fridge for up to 3 days.
