Description

Delightful danishes filled with cream cheese, lemon curd, and raspberries, perfect for brunch or a cozy treat.


Ingredients

  • 1 sheet puff pastry
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/4 cup lemon curd
  • 1 cup fresh raspberries
  • 1 egg, beaten (for egg wash)
  • 1/2 cup powdered sugar (for glaze)
  • 12 tablespoons lemon juice (for glaze)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out the puff pastry on a lightly floured surface and cut it into squares.
  3. Mix the softened cream cheese with the powdered sugar until smooth.
  4. Place a generous dollop of the cream cheese mixture in the center of each pastry square, followed by lemon curd and raspberries.
  5. Fold the corners of the pastry squares towards the center and pinch to seal.
  6. Brush the tops of the danishes with the beaten egg.
  7. Bake for 15-20 minutes or until golden brown.
  8. Mix powdered sugar with lemon juice to create a smooth glaze.
  9. Drizzle the glaze over the danishes before serving.
