Description

Delightfully soft and buttery cookies, infused with fresh lemon zest and juice for a perfect balance of tart and sweet.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups sugar
  • 1 egg
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 1/4 cup sparkling sugar for coating

Instructions

  1. Preheat your oven to 350°F (175°C) so that it’s ready to work its magic.
  2. Whisk together your flour, baking soda, and salt until well combined.
  3. Cream the softened butter and sugar together until light and fluffy.
  4. Beat in the egg, lemon zest, lemon juice, and vanilla extract until everything is well combined.
  5. Combine gradually the flour mixture to the wet ingredients until just incorporated.
  6. Form the dough into balls, about 1 tablespoon each, and roll them in sparkling sugar.
  7. Place the dough balls on a baking sheet lined with parchment paper and flatten slightly.
  8. Bake for 8-10 minutes until the edges turn golden.
  9. Cool on a wire rack before serving.
