Instructions
- Preheat your oven to 350°F (175°C) so that it’s ready to work its magic.
- Whisk together your flour, baking soda, and salt until well combined.
- Cream the softened butter and sugar together until light and fluffy.
- Beat in the egg, lemon zest, lemon juice, and vanilla extract until everything is well combined.
- Combine gradually the flour mixture to the wet ingredients until just incorporated.
- Form the dough into balls, about 1 tablespoon each, and roll them in sparkling sugar.
- Place the dough balls on a baking sheet lined with parchment paper and flatten slightly.
- Bake for 8-10 minutes until the edges turn golden.
- Cool on a wire rack before serving.
