- 2 medium zucchinis, sliced
- 2 medium yellow squash, sliced
- 1 cup shredded cheddar cheese
- 1/2 cup heavy cream
- 3 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the sliced zucchinis and yellow squash in a mixing bowl.
- Whisk together the eggs, heavy cream, garlic powder, onion powder, salt, and pepper in another bowl.
- Add the shredded cheddar cheese to the egg mixture and stir until well combined.
- Grease a baking dish with olive oil and layer the squash mixture evenly at the bottom.
- Pour the egg and cheese mixture over the squash.
- Sprinkle grated Parmesan cheese on top.
- Bake for 30-35 minutes or until the casserole is set and the top is golden.
- Let it cool slightly before serving.
