Description

These Maple-Glazed Roasted Carrots shine with a beautiful caramel exterior, bursting with a balance of sweetness and tang.


Ingredients

  • 2 pounds Carrots, peeled and cut into uniform 1-inch thick rounds
  • ¼ cup Maple Syrup, preferably pure
  • 2 tablespoons Olive Oil, extra virgin
  • 1 tablespoon Dijon Mustard
  • 1 tablespoon Apple Cider Vinegar
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Dried Thyme
  • ½ teaspoon Salt, or to taste
  • ¼ teaspoon Black Pepper, freshly ground, or to taste
  • 2 tablespoons Fresh Parsley, chopped, for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper.
  2. Wash and peel your carrots thoroughly. Trim off the ends, then cut them into uniform 1-inch thick rounds.
  3. Whisk together the maple syrup, olive oil, Dijon mustard, apple cider vinegar, garlic powder, dried thyme, salt, and black pepper in a medium bowl.
  4. Toss the carrot rounds in the bowl with the maple glaze until every piece is coated.
  5. Arrange the glazed carrots in a single layer on the prepared baking sheet, avoiding overcrowding.
  6. Roast in the oven for 25-30 minutes until tender and caramelized, flipping halfway through.
  7. Check for doneness by piercing a carrot with a fork; it should be tender but still have a slight bite.
  8. Garnish with freshly chopped parsley, if desired, and serve warm.

Notes

For best results, choose brightly colored, firm carrots. Feel free to adjust glaze ingredients to your taste.
