- 1 teaspoon Garlic Powder
- 1 teaspoon Dried Thyme
- ½ teaspoon Salt, or to taste

Instructions
- Preheat your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper.
- Wash and peel your carrots thoroughly. Trim off the ends, then cut them into uniform 1-inch thick rounds.
- Whisk together the maple syrup, olive oil, Dijon mustard, apple cider vinegar, garlic powder, dried thyme, salt, and black pepper in a medium bowl.
- Toss the carrot rounds in the bowl with the maple glaze until every piece is coated.
- Arrange the glazed carrots in a single layer on the prepared baking sheet, avoiding overcrowding.
- Roast in the oven for 25-30 minutes until tender and caramelized, flipping halfway through.
- Check for doneness by piercing a carrot with a fork; it should be tender but still have a slight bite.
- Garnish with freshly chopped parsley, if desired, and serve warm.
Notes
For best results, choose brightly colored, firm carrots. Feel free to adjust glaze ingredients to your taste.
