- 2 chicken breasts
- 1 cup orzo pasta
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Season the chicken breasts with salt and pepper, then add them to the pot. Cook until browned on both sides, about 5-7 minutes per side. Remove from the pot and set aside.
- In the same pot, add minced garlic and sauté for about 1 minute until fragrant.
- Add the orzo and chicken broth, bringing it to a boil. Reduce heat and simmer for about 10 minutes until the orzo is cooked.
- Stir in the heavy cream and Parmesan cheese. Return the chicken to the pot and simmer for an additional 5 minutes.
- Garnish with fresh basil before serving.
Notes
Feel free to add sun-dried tomatoes or spinach for added flavor and nutrition. This dish also pairs well with a light white wine.
