Description

A comforting blend of fresh crab meat and hearty vegetables in a velvety broth, capturing the essence of summer in Maryland.


Ingredients

  • 1 pound fresh crab meat
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or seafood stock
  • 2 cups diced tomatoes
  • 1 cup corn, fresh or frozen
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Old Bay seasoning
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the onion and bell pepper, and sauté until softened.
  2. Stir in the garlic and cook for an additional minute.
  3. Pour in the stock and bring to a simmer.
  4. Add the diced tomatoes, corn, Worcestershire sauce, and Old Bay seasoning.
  5. Simmer for about 15 minutes to meld flavors.
  6. Gently fold in the crab meat and heat through.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with chopped parsley.

Notes

Fresh crab meat provides the best flavor. You can substitute with shrimp or mixed vegetables for variation.
