- 4 chicken thighs
- 1 can of artichoke hearts, drained and chopped
- 1/2 cup olives, pitted and sliced
- 1 lemon, juiced and zested
- 4 cloves of garlic, minced
- 1/2 cup white wine
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C) to ensure your chicken bakes to perfection.
- Sear the chicken thighs with salt and pepper in a large skillet over medium heat for about 5 minutes each side.
- Add the minced garlic to the skillet and sauté for about 1 minute until fragrant.
- Pour in the white wine, then add the lemon juice and zest, artichokes, and olives. Stir to combine.
- Transfer your skillet to the oven and bake for 25-30 minutes, or until the chicken is cooked through.
- Garnish with fresh parsley before serving.
Notes
Let the chicken rest a few minutes before serving to lock in juices. Feel free to swap chicken thighs for breasts.
