Description

An effortless yet impressive Mediterranean Chicken dish with juicy thighs, tangy artichokes, briny olives, and fresh lemon.


Ingredients

  • 4 chicken thighs
  • 1 can of artichoke hearts, drained and chopped
  • 1/2 cup olives, pitted and sliced
  • 1 lemon, juiced and zested
  • 4 cloves of garlic, minced
  • 1/2 cup white wine
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C) to ensure your chicken bakes to perfection.
  2. Sear the chicken thighs with salt and pepper in a large skillet over medium heat for about 5 minutes each side.
  3. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant.
  4. Pour in the white wine, then add the lemon juice and zest, artichokes, and olives. Stir to combine.
  5. Transfer your skillet to the oven and bake for 25-30 minutes, or until the chicken is cooked through.
  6. Garnish with fresh parsley before serving.
