A quick and delicious Mediterranean-inspired stir-fry featuring ground beef, fresh vegetables, and crumbled feta cheese, all coming together in just 25 minutes.
Ingredients

- 1 lb ground beef
- 2 cloves garlic, minced
- 1 onion, diced
- 1 bell pepper, diced
- 2 tomatoes, diced
- 1 tsp Mediterranean herbs (oregano, thyme, etc.)
- 1/2 cup olives, sliced
- 1/2 cup feta cheese, crumbled
- Salt and pepper to taste
- Rice, quinoa, or lettuce wraps for serving
Instructions
- Sauté the garlic and onion in olive oil for 3-4 minutes.
- Brown the ground beef until cooked through, about 5-6 minutes.
- Add diced bell pepper, tomatoes, and herbs; cook for 5-7 minutes.
- Mix in olives and feta cheese, seasoning to taste.
- Serve over rice, quinoa, or in lettuce wraps.
Notes
For a vegetarian version, substitute ground beef with lentils or crumbled tempeh. Store leftovers in an airtight container for up to 3 days or freeze for up to a month.
