Description

A quick and delicious Mediterranean-inspired stir-fry featuring ground beef, fresh vegetables, and crumbled feta cheese, all coming together in just 25 minutes.


Ingredients

Scale
  • 1 lb ground beef
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 tomatoes, diced
  • 1 tsp Mediterranean herbs (oregano, thyme, etc.)
  • 1/2 cup olives, sliced
  • 1/2 cup feta cheese, crumbled
  • Salt and pepper to taste
  • Rice, quinoa, or lettuce wraps for serving

Instructions

  1. Sauté the garlic and onion in olive oil for 3-4 minutes.
  2. Brown the ground beef until cooked through, about 5-6 minutes.
  3. Add diced bell pepper, tomatoes, and herbs; cook for 5-7 minutes.
  4. Mix in olives and feta cheese, seasoning to taste.
  5. Serve over rice, quinoa, or in lettuce wraps.

Notes

For a vegetarian version, substitute ground beef with lentils or crumbled tempeh. Store leftovers in an airtight container for up to 3 days or freeze for up to a month.
