Description

A warm and comforting soup filled with vibrant vegetables and tender lentils, perfect for any day of the year.


Ingredients

  • 1 cup lentils
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 can (14oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • Olive oil
  • Fresh parsley, for garnish

Instructions

  1. Sauté the Aromatics: In a large pot, heat a swirl of olive oil over medium heat. Toss in the chopped onion and minced garlic, letting them dance and sizzle together.
  2. Add the Veggies: Once the onion turns translucent, invite the diced carrots and celery into the pot. Sauté until they soften, about 5 minutes.
  3. Stir in the Lentils and Tomatoes: Add the lentils and can of diced tomatoes, mixing everything well.
  4. Pour in the Broth and Season: Add the vegetable broth, cumin, paprika, salt, and pepper. Bring everything to a boil.
  5. Simmer to Perfection: Once boiling, reduce the heat and let the soup simmer for about 30 minutes, or until the lentils are tender.
  6. Adjust, Garnish, and Serve: Taste and adjust the seasoning if needed, then ladle into bowls and garnish with fresh parsley.

Notes

Serve with warm pita bread or a fresh salad. This soup freezes well and can be stored for up to 3 months.
