- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 can (14oz) diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper, to taste
- Olive oil
- Fresh parsley, for garnish
Instructions
- Sauté the Aromatics: In a large pot, heat a swirl of olive oil over medium heat. Toss in the chopped onion and minced garlic, letting them dance and sizzle together.
- Add the Veggies: Once the onion turns translucent, invite the diced carrots and celery into the pot. Sauté until they soften, about 5 minutes.
- Stir in the Lentils and Tomatoes: Add the lentils and can of diced tomatoes, mixing everything well.
- Pour in the Broth and Season: Add the vegetable broth, cumin, paprika, salt, and pepper. Bring everything to a boil.
- Simmer to Perfection: Once boiling, reduce the heat and let the soup simmer for about 30 minutes, or until the lentils are tender.
- Adjust, Garnish, and Serve: Taste and adjust the seasoning if needed, then ladle into bowls and garnish with fresh parsley.
Notes
Serve with warm pita bread or a fresh salad. This soup freezes well and can be stored for up to 3 months.
