Description

A light and zesty Mediterranean-inspired dish featuring creamy avocados filled with a flavorful tuna salad.


Ingredients

Scale
  • 2 ripe avocados
  • 1 can (5 oz) tuna, drained
  • 1/4 cup diced red onion
  • 1/4 cup diced cucumber
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons kalamata olives, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cut the avocados in half and remove the pit. Scoop out a little of the flesh to create more space for the filling.
  2. In a bowl, combine the tuna, red onion, cucumber, cherry tomatoes, feta cheese, kalamata olives, olive oil, lemon juice, salt, and pepper. Mix well to combine.
  3. Spoon the tuna salad mixture into the avocado halves.
  4. Garnish with fresh parsley and serve immediately.

Notes

Best enjoyed fresh. Store any leftover tuna salad in an airtight container for up to 2 days.
