Ingredients

  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup cotija cheese, crumbled
  • 1 teaspoon chili powder
  • 1 lime, juiced
  • Fresh cilantro, chopped
  • Salt and pepper to taste
  • Tortilla chips or rice for serving

Instructions

  1. Grill the corn by heating your grill to medium-high heat, brushing the corn with olive oil, and grilling until charred for about 10-12 minutes. Cut the kernels off the cob once cool.
  2. Mix mayonnaise, sour cream, chili powder, lime juice, salt, and pepper in a bowl to create the sauce.
