Description

A vibrant and flavorful salad inspired by the classic Mexican street corn, perfect for gatherings and summer picnics.


Ingredients

  • 4 cups corn kernels (fresh or frozen)
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/2 cup cotija cheese, crumbled
  • 1/4 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions
