Ingredients

  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup crumbled cotija cheese
  • 1 teaspoon chili powder
  • 1 teaspoon lime juice
  • Salt to taste
  • Chopped cilantro for garnish

Instructions

  1. Heat your grill to medium-high. Place the husked corn directly on the grill, turning occasionally, until charred on all sides—this should take about 10 minutes.
  2. Combine the mayonnaise, sour cream, lime juice, chili powder, and a pinch of salt in a bowl. Mix until well incorporated.
  3. Spread the creamy mixture all over the hot corn.
  4. Sprinkle a generous amount of crumbled cotija cheese over the corn.
  5. Garnish with freshly chopped cilantro.
