Description

Bright, buttery, and blissfully sweet cookies that melt in your mouth, featuring the unique tang of Meyer lemons.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 2 tablespoons Meyer lemon juice
  • 1 tablespoon Meyer lemon zest
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • Additional powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter and powdered sugar until fluffy.
  3. Add the Meyer lemon juice and zest until well combined.
  4. Gradually add the flour and salt, mixing until the dough comes together.
  5. Shape small balls of dough (about a tablespoon-sized) and place them on a baking sheet lined with parchment paper.
  6. Bake for about 12-15 minutes, or until the edges are lightly golden.
  7. Remove the cookies from the oven and cool slightly, then dust generously with powdered sugar while still warm.
  8. Enjoy! Bite into the buttery lemon goodness.

Notes

For added flavor, incorporate more lemon zest or juice; store cookies in an airtight container at room temperature for up to a week.
