- 6 cups sliced peaches (fresh or canned)
- 1 cup sugar
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1 1/2 cups all-purpose flour
- 1 cup milk
- 1/2 cup butter, melted
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- Cinnamon (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine the sliced peaches, 1/2 cup sugar, vanilla extract, and lemon juice. Set aside.
- In a separate bowl, mix flour, remaining sugar, baking powder, and salt. Whisk until combined.
- Add milk and melted butter to the dry mixture and stir to combine.
- Pour the batter into a greased baking dish.
- Spoon the peach mixture over the batter evenly.
- If desired, sprinkle cinnamon on top.
- Bake for 30-40 minutes or until golden brown and bubbly.
- Serve warm, ideally with vanilla ice cream.
