Description

These One-Bowl Banana Muffins are moist and packed with banana flavor, perfect for breakfast or a sweet treat.


Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar (can reduce to 1/2 cup for less sweetness)
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. Mash the ripe bananas with a fork until smooth.
  3. Stir the melted butter into the mashed bananas.
  4. Mix in the baking soda and a pinch of salt.
  5. Add sugar, the beaten egg, and vanilla extract; mix until combined.
  6. Stir in the flour until just incorporated.
  7. Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  8. Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  9. Let cool for a few minutes before transferring to a wire rack.

Notes

Ensure your bananas are very ripe for best results. You can add nuts or chocolate chips for extra texture.
