Ingredients

  • 1 loaf of English muffins, split
  • 8 large eggs
  • 2 cups milk
  • 1/2 cup heavy cream
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1 cup cooked ham, diced
  • 1 cup shredded cheddar cheese
  • Hollandaise sauce (for serving)
  • Chopped fresh parsley (for garnish)

Instructions

  1. Grease a large baking dish with butter or cooking spray and layer the split English muffins cut side up.
  2. In a bowl, whisk together the eggs, milk, heavy cream, Dijon mustard, salt, and pepper.
  3. Pour the egg mixture over the English muffins and ensure they are well soaked.
  4. Layer the diced ham evenly over the top, then sprinkle with shredded cheddar cheese.
  5. Cover with plastic wrap and refrigerate overnight.
  6. Preheat the oven to 350°F (175°C).
