A delicious pancake sausage casserole that combines fluffy pancakes with savory sausage, perfect for breakfast or brunch.

- 1 lb breakfast sausage (cooked and crumbled)
- 2 cups pancake mix
- 1 cup milk
- 2 eggs
- 1 tsp vanilla extract
- 1 tbsp maple syrup (optional)
- ½ tsp cinnamon (optional)
- Butter or cooking spray (for greasing the baking dish)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or cooking spray.
- Cook the sausage in a skillet over medium heat until browned and crumbly, about 5–7 minutes. Drain excess grease and set aside.
- Mix the pancake mix, milk, eggs, vanilla extract, maple syrup (if using), and cinnamon (if using) in a bowl until smooth.
- Pour half of the pancake batter into the greased baking dish.
- Add the cooked sausage evenly over the pancake batter.
- Pour the remaining pancake batter over the sausage layer.
- Bake for 25–30 minutes or until golden brown and set in the center.
- Cool slightly before slicing into squares. Serve warm with extra maple syrup if desired.
Notes
For added flavor, experiment with spices or serve with fresh fruit or whipped cream.
