Description

A delicious pancake sausage casserole that combines fluffy pancakes with savory sausage, perfect for breakfast or brunch.


Ingredients

  • 1 lb breakfast sausage (cooked and crumbled)
  • 2 cups pancake mix
  • 1 cup milk
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tbsp maple syrup (optional)
  • ½ tsp cinnamon (optional)
  • Butter or cooking spray (for greasing the baking dish)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or cooking spray.
  2. Cook the sausage in a skillet over medium heat until browned and crumbly, about 5–7 minutes. Drain excess grease and set aside.
  3. Mix the pancake mix, milk, eggs, vanilla extract, maple syrup (if using), and cinnamon (if using) in a bowl until smooth.
  4. Pour half of the pancake batter into the greased baking dish.
  5. Add the cooked sausage evenly over the pancake batter.
  6. Pour the remaining pancake batter over the sausage layer.
  7. Bake for 25–30 minutes or until golden brown and set in the center.
  8. Cool slightly before slicing into squares. Serve warm with extra maple syrup if desired.

Notes

For added flavor, experiment with spices or serve with fresh fruit or whipped cream.
