- 2 cups all-purpose flour
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup buttermilk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup fresh peaches, chopped
- 1/2 cup brown sugar
- 1/2 cup oats
- 1/4 cup all-purpose flour
- 1/2 teaspoon cinnamon
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin pan with liners.
- Whisk together the flour, sugar, baking powder, baking soda, and salt in a large bowl.
- Mix the melted butter, buttermilk, eggs, and vanilla in another bowl until well combined.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
- Fold in the chopped peaches gently.
- Combine the brown sugar, oats, flour, and cinnamon for the streusel topping and mix until crumbly.
- Fill the muffin liners about two-thirds full with batter and sprinkle the streusel on top.
- Bake for 20-25 minutes, or until a toothpick comes out clean.
- Allow to cool before serving.
