Description

Light and fluffy peach muffins bursting with the sweetness of fresh peaches and topped with a buttery streusel.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup buttermilk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh peaches, chopped
  • 1/2 cup brown sugar
  • 1/2 cup oats
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin pan with liners.
  2. Whisk together the flour, sugar, baking powder, baking soda, and salt in a large bowl.
  3. Mix the melted butter, buttermilk, eggs, and vanilla in another bowl until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Fold in the chopped peaches gently.
  6. Combine the brown sugar, oats, flour, and cinnamon for the streusel topping and mix until crumbly.
  7. Fill the muffin liners about two-thirds full with batter and sprinkle the streusel on top.
  8. Bake for 20-25 minutes, or until a toothpick comes out clean.
  9. Allow to cool before serving.
