Instructions
- Preheat the oven to 425°F (220°C).
- Dice the potatoes into 1-inch cubes and place them in a large bowl.
- Drizzle olive oil over the potatoes and sprinkle with salt, pepper, garlic powder, and paprika. Toss to coat evenly.
- Spread the potatoes in a single layer on a baking sheet.
- Bake for 25-30 minutes, or until golden brown and crispy, turning halfway through.
- Garnish with fresh parsley, if desired, and serve hot.
Notes
For extra crunch, soak diced potatoes in cold water for 30 minutes before cooking. You can also use pre-diced frozen potatoes for convenience.
