Ingredients

  • 4 medium potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Dice the potatoes into 1-inch cubes and place them in a large bowl.
  3. Drizzle olive oil over the potatoes and sprinkle with salt, pepper, garlic powder, and paprika. Toss to coat evenly.
  4. Spread the potatoes in a single layer on a baking sheet.

Notes

For extra crunch, soak diced potatoes in cold water for 30 minutes before cooking. You can also use pre-diced frozen potatoes for convenience.
