Instructions
- In a large skillet, heat olive oil over medium heat. Add the diced onions and minced garlic, and sauté until they become translucent.
- Add the diced chicken to the skillet, seasoning with salt and pepper. Cook until browned on all sides.
- Stir in the diced bell pepper and pineapple chunks. Let them soften for a minute.
- In a small bowl, combine the soy sauce and brown sugar. Pour into the skillet and stir well.
- Add the cooked rice to the skillet, tossing everything together. Cook for another 5-7 minutes until heated through.
