Ingredients

  • 1 bell pepper, diced
  • 1/4 cup soy sauce
  • 1 tablespoon olive oil
  • 1 tablespoon brown sugar
  • Salt and pepper to taste
  • Fresh herbs (e.g., cilantro) for garnish
  • Lime wedges for serving

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the diced onions and minced garlic, and sauté until they become translucent.
  2. Add the diced chicken to the skillet, seasoning with salt and pepper. Cook until browned on all sides.
  3. Stir in the diced bell pepper and pineapple chunks. Let them soften for a minute.
  4. In a small bowl, combine the soy sauce and brown sugar. Pour into the skillet and stir well.
  5. Add the cooked rice to the skillet, tossing everything together. Cook for another 5-7 minutes until heated through.
