Description

A comforting Indian dessert made with semolina, fresh pineapple, and aromatic cardamom.


Ingredients

Scale
  • 1 cup pineapple, grated
  • 1 cup semolina (sooji)
  • 1 cup sugar
  • 1 cup ghee (clarified butter)
  • 2 cups water
  • 1/2 teaspoon cardamom powder
  • Chopped nuts (cashews, almonds) for garnish

Instructions

  1. Heat ghee in a pan and add the semolina. Roast until golden brown, stirring continuously.
  2. In another pot, bring water to a boil, then add the grated pineapple and sugar. Cook until the sugar dissolves.
  3. Slowly add the roasted semolina to the pineapple mixture while stirring continuously.
  4. Mix in the cardamom powder and cook until the halwa thickens and leaves the sides of the pan.
  5. Garnish with chopped nuts and serve warm.

Notes

The halwa can be served with vanilla ice cream or masala chai for a delightful dessert experience. Store leftovers in an airtight container in the refrigerator for up to 4 days.
