Description

A delicate and creamy pistachio milk pudding, evoking warm memories and rich flavors.


Ingredients

Scale
  • 1/2 cup pistachios
  • 2 cups milk
  • 1/4 cup sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Soak the pistachios in water for at least 4 hours, then drain.
  2. Blend the drained pistachios with 1 cup of milk until smooth.
  3. In a saucepan, whisk together the blended pistachio mixture, sugar, cornstarch, salt, and the remaining cup of milk.
  4. Cook over medium heat, stirring constantly until thickened, about 5-7 minutes.
  5. Remove from heat and stir in the vanilla extract.
  6. Pour the pudding into serving dishes and refrigerate until set, at least 3 hours.
  7. Serve chilled, garnished with crushed pistachios if desired.

Notes

Store leftovers in the refrigerator for up to 2 days, stirring before serving.
