Ingredients

- 1/2 cup pistachios
- 2 cups milk
- 1/4 cup sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Soak the pistachios in water for at least 4 hours, then drain.
- Blend the drained pistachios with 1 cup of milk until smooth.
- In a saucepan, whisk together the blended pistachio mixture, sugar, cornstarch, salt, and the remaining cup of milk.
- Cook over medium heat, stirring constantly until thickened, about 5-7 minutes.
- Remove from heat and stir in the vanilla extract.
- Pour the pudding into serving dishes and refrigerate until set, at least 3 hours.
- Serve chilled, garnished with crushed pistachios if desired.
Notes
Store leftovers in the refrigerator for up to 2 days, stirring before serving.
