Ingredients

- 1 lb pork shoulder, cut into cubes
- 2 tbsp olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 4 carrots, sliced
- 3 potatoes, cubed
- 4 cups chicken or vegetable broth
- 1 tsp thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the pork shoulder cubes to the pot and brown them on all sides.
- Next, add the chopped onion and minced garlic, sautéing until the onions are translucent.
- Stir in the sliced carrots and cubed potatoes, letting them cook for another 5 minutes.
- Pour in the chicken or vegetable broth, making sure to scrape up any brown bits from the bottom of the pot.
- Add the thyme, bay leaf, salt, and pepper.
- Increase the heat to bring the stew to a boil, then reduce to a gentle simmer.
- Cover the pot and let it cook for about 1.5 to 2 hours until the pork is tender and falling apart.
- Remove the bay leaf before serving.
Notes
Serve with crusty bread or a side salad. Store leftovers in an airtight container for up to 3 days in the fridge.
