Description

A comforting pork stew filled with tender meat and aromatic vegetables, perfect for chilly evenings.


Ingredients

Scale
  • 1 lb pork shoulder, cut into cubes
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 4 carrots, sliced
  • 3 potatoes, cubed
  • 4 cups chicken or vegetable broth
  • 1 tsp thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the pork shoulder cubes to the pot and brown them on all sides.
  3. Next, add the chopped onion and minced garlic, sautéing until the onions are translucent.
  4. Stir in the sliced carrots and cubed potatoes, letting them cook for another 5 minutes.
  5. Pour in the chicken or vegetable broth, making sure to scrape up any brown bits from the bottom of the pot.
  6. Add the thyme, bay leaf, salt, and pepper.
  7. Increase the heat to bring the stew to a boil, then reduce to a gentle simmer.
  8. Cover the pot and let it cook for about 1.5 to 2 hours until the pork is tender and falling apart.
  9. Remove the bay leaf before serving.

Notes

Serve with crusty bread or a side salad. Store leftovers in an airtight container for up to 3 days in the fridge.
