Description

A comforting one-pan dish featuring hearty potatoes, savory Italian sausage, and colorful vegetables, perfect for weeknight dinners.


Ingredients

  • 1.5 lbs Yukon Gold or Russet Potatoes, cubed
  • 1 lb Italian Sausage (Sweet or Hot), removed from casings
  • 1 Large Onion, sliced
  • 2 Bell Peppers (any color), sliced
  • 23 Cloves Garlic, minced
  • 2 Tablespoons Olive Oil
  • 1 teaspoon Dried Italian Herbs
  • 1/2 teaspoon Paprika (Smoked or Sweet)
  • 1/4 teaspoon Red Pepper Flakes (optional)
  • Salt and Black Pepper, to taste
  • Fresh Parsley, chopped (for garnish)

Instructions

  1. Prepare the potatoes and vegetables by washing and cubing the potatoes and slicing the onion and bell peppers.
  2. Brown the sausage in a skillet over medium-high heat until cooked through, then remove and set aside.
  3. Sauté the onions in the skillet until translucent, then add bell peppers and garlic until fragrant.
  4. Add the cubed potatoes and seasonings, stirring to combine.
  5. Cook with water or broth covered until the potatoes are tender.
  6. Combine the cooked sausage back into the skillet and heat through.
  7. Serve garnished with fresh parsley.
