- 1.5 lbs Yukon Gold or Russet Potatoes, cubed
- 1 lb Italian Sausage (Sweet or Hot), removed from casings
- 1 Large Onion, sliced
- 2 Bell Peppers (any color), sliced
- 2–3 Cloves Garlic, minced
- 2 Tablespoons Olive Oil
- 1 teaspoon Dried Italian Herbs
- 1/2 teaspoon Paprika (Smoked or Sweet)
- 1/4 teaspoon Red Pepper Flakes (optional)
- Salt and Black Pepper, to taste
- Fresh Parsley, chopped (for garnish)
Instructions
- Prepare the potatoes and vegetables by washing and cubing the potatoes and slicing the onion and bell peppers.
- Brown the sausage in a skillet over medium-high heat until cooked through, then remove and set aside.
- Sauté the onions in the skillet until translucent, then add bell peppers and garlic until fragrant.
- Add the cubed potatoes and seasonings, stirring to combine.
- Cook with water or broth covered until the potatoes are tender.
- Combine the cooked sausage back into the skillet and heat through.
- Serve garnished with fresh parsley.
