Ingredients

- 4 large tomatoes
- 1 cup cooked rice
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1/2 cup chopped fresh herbs (such as basil, thyme, and parsley)
- 1/2 cup grated cheese (such as Parmesan or mozzarella)
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the tomatoes and scoop out the insides, reserving the pulp.
- In a skillet, heat olive oil over medium heat and sauté the diced onion and minced garlic until softened and fragrant.
- Mix in the reserved tomato pulp, cooked rice, fresh herbs, grated cheese, salt, and pepper until well combined.
- Generously stuff the mixture into the hollowed-out tomatoes until they’re filled to the brim.
- Place the stuffed tomatoes upright in a baking dish and drizzle with a little extra olive oil for good measure.
- Bake for 25-30 minutes, until the tomatoes are tender and the tops are beautifully golden-brown.
- Serve warm, garnished with a sprinkle of fresh herbs, if desired.
Notes
Choose firm, ripe tomatoes for the best flavor and texture. Feel free to customize the filling based on what you have on hand.
