Description

Delightful stuffed tomatoes filled with rice, fresh herbs, and cheese, transporting you to summer days in the South of France.


Ingredients

  • 4 large tomatoes
  • 1 cup cooked rice
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1/2 cup chopped fresh herbs (such as basil, thyme, and parsley)
  • 1/2 cup grated cheese (such as Parmesan or mozzarella)
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the tomatoes and scoop out the insides, reserving the pulp.
  3. In a skillet, heat olive oil over medium heat and sauté the diced onion and minced garlic until softened and fragrant.
  4. Mix in the reserved tomato pulp, cooked rice, fresh herbs, grated cheese, salt, and pepper until well combined.
  5. Generously stuff the mixture into the hollowed-out tomatoes until they’re filled to the brim.
  6. Place the stuffed tomatoes upright in a baking dish and drizzle with a little extra olive oil for good measure.
  7. Bake for 25-30 minutes, until the tomatoes are tender and the tops are beautifully golden-brown.
  8. Serve warm, garnished with a sprinkle of fresh herbs, if desired.
