  • 1/4 teaspoon salt
  • 1 cup maple frosting (store-bought or homemade)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the egg and pumpkin puree until well combined.
  4. Whisk together the rolled oats, flour, baking soda, cinnamon, nutmeg, and salt in a separate bowl.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 12-15 minutes or until the edges are golden.
  8. Allow cookies to cool, then top with maple frosting before serving.
