Description

Ingredients

  • 2 large eggs
  • 1/4 cup milk
  • Salt and pepper to taste
  • 1/4 cup shredded cheese (cheddar or your choice)
  • 1/4 cup bell peppers, diced
  • 1/4 cup onions, diced
  • 1/4 cup spinach, chopped
  • Butter or oil for cooking

Instructions

  1. In a bowl, whisk together the eggs, milk, salt, and pepper until well combined and slightly frothy.
  2. Heat a skillet over medium heat and add butter or oil.
  3. Add the diced onions and bell peppers to the skillet and sauté until softened, about 2-3 minutes.
  4. Add the chopped spinach and cook for an additional minute until wilted.
  5. Carefully pour the egg mixture into the skillet, tilting the pan to spread it evenly.
  6. Cook for a few minutes until the edges start to set and the top begins to firm up.
  7. Sprinkle the shredded cheese on one half of the omelet.
  8. Fold the other half of the omelet over the cheese and cook for an additional minute.
  9. Slide the omelet onto a plate and serve hot, garnished as desired.
