Description

A warm dessert combining tart raspberries with a biscuit-like topping that evokes cherished memories of summer gatherings.


Ingredients

  • 16 ounces raspberries (fresh or frozen)
  • 1/2 cup sugar
  • 1 tablespoon cornstarch
  • 1 cup flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/4 cup salted butter (slightly softened)
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F.
  2. Place the raspberries in a large bowl.
  3. Add 1/2 cup of sugar and 1 tablespoon of cornstarch to the berries, then gently stir to combine.
  4. Dump the berry mixture into the bottom of a baking dish.
  5. Combine the flour, 1/2 cup sugar, and baking powder in another bowl.
  6. Add the softened butter and cut it into the dry ingredients until resembling pea-sized clumps.
  7. Drizzle the milk and vanilla extract over the dry mix and gently stir to combine.
  8. Break the topping apart into chunks and sprinkle it evenly over the raspberry mixture.
  9. Bake for 35-40 minutes or until golden brown.
  10. Serve warm, topped with whipped cream or ice cream if desired.

Notes

Leftovers can be stored in an airtight container in the refrigerator for 3-4 days. Reheat in the oven before serving.
