- 16 ounces raspberries (fresh or frozen)
- 1/2 cup sugar
- 1 tablespoon cornstarch
- 1 cup flour
- 1/2 cup sugar
- 1 teaspoon baking powder
- 1/4 cup salted butter (slightly softened)
- 1/4 cup milk
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F.
- Place the raspberries in a large bowl.
- Add 1/2 cup of sugar and 1 tablespoon of cornstarch to the berries, then gently stir to combine.
- Dump the berry mixture into the bottom of a baking dish.
- Combine the flour, 1/2 cup sugar, and baking powder in another bowl.
- Add the softened butter and cut it into the dry ingredients until resembling pea-sized clumps.
- Drizzle the milk and vanilla extract over the dry mix and gently stir to combine.
- Break the topping apart into chunks and sprinkle it evenly over the raspberry mixture.
- Bake for 35-40 minutes or until golden brown.
- Serve warm, topped with whipped cream or ice cream if desired.
Notes
Leftovers can be stored in an airtight container in the refrigerator for 3-4 days. Reheat in the oven before serving.
