Instructions
- Using a vegetable peeler, slice the courgettes and carrot into long ribbons.
- Cut the bell pepper into thin strips, removing seeds and core.
- In a large bowl, combine the courgette ribbons, carrot ribbons, and bell pepper strips.
- Drizzle with olive oil and lemon juice, then season with salt and pepper to taste.
- Toss gently to combine, preserving the delicate ribbons.
