Description

A refreshing and colorful salad featuring courgette ribbons, carrot, and bell pepper, dressed with olive oil and lemon juice.


Ingredients

Scale
  • 2 medium courgettes (zucchini)
  • 1 medium carrot
  • 1 bell pepper (any color)
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh herbs (such as basil or parsley) for garnish

Instructions

  1. Using a vegetable peeler, slice the courgettes and carrot into long ribbons.
  2. Cut the bell pepper into thin strips, removing seeds and core.
  3. In a large bowl, combine the courgette ribbons, carrot ribbons, and bell pepper strips.
  4. Drizzle with olive oil and lemon juice, then season with salt and pepper to taste.
  5. Toss gently to combine, preserving the delicate ribbons.
  6. Garnish with fresh herbs before serving.

Notes
