Description

A warm, comforting salad featuring butter-fried chicken served on a bed of fresh greens and topped with feta and cherry tomatoes.


Ingredients

Scale
  • 2 chicken breasts
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • Olive oil and vinegar for dressing

Instructions

  1. Season the chicken breasts generously with salt and pepper.
  2. In a skillet over medium heat, melt the butter. Once foamy, add the seasoned chicken and cook for 6-7 minutes on each side until golden brown. Let the chicken rest.
  3. In a large bowl, combine mixed salad greens, cherry tomatoes, cucumber, red onion, and feta cheese.
  4. Slice the rested chicken and add it on top of the salad. Drizzle with olive oil and vinegar.

Notes

Store leftovers in separate airtight containers; consume salad within 24 hours for best freshness. Experiment with different dressings and salad ingredients!
