A warm, comforting salad featuring butter-fried chicken served on a bed of fresh greens and topped with feta and cherry tomatoes.

- 2 chicken breasts
- 2 tablespoons butter
- Salt and pepper to taste
- 4 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1/4 red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- Olive oil and vinegar for dressing
Instructions
- Season the chicken breasts generously with salt and pepper.
- In a skillet over medium heat, melt the butter. Once foamy, add the seasoned chicken and cook for 6-7 minutes on each side until golden brown. Let the chicken rest.
- In a large bowl, combine mixed salad greens, cherry tomatoes, cucumber, red onion, and feta cheese.
- Slice the rested chicken and add it on top of the salad. Drizzle with olive oil and vinegar.
Notes
Store leftovers in separate airtight containers; consume salad within 24 hours for best freshness. Experiment with different dressings and salad ingredients!
