Ingredients
- Whole fish (e.g., seabass or snapper)
- Coarse sea salt
- Eggs (for sauce)
- Soy sauce
- Butter
- Lemon juice
- Fresh herbs (e.g., dill or parsley)
- Black pepper
Instructions
- Preheat the oven to 400°F (200°C).
- Clean and prep the whole fish, removing any scales and insides. Season with black pepper and sprinkle fresh herbs.
- Mix coarse sea salt with a little water to form a paste.
- Cover the fish entirely with the salt paste and place on a baking sheet.
- Bake in the oven for about 25-30 minutes, until cooked through.
- In a double boiler, whisk egg yolks and lemon juice until creamy.
- Slowly incorporate melted butter while whisking continuously.
- Stir in soy sauce to taste.
- Remove the fish from the salt crust and serve with hollandaise and garnish with additional herbs.
