Ingredients

- 1 cup heavy cream
- 1/2 cup whole milk
- 1/2 cup granulated sugar
- 1/4 cup water
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 2 large eggs
Instructions
- In a small saucepan, combine sugar and water, and cook over medium heat until the sugar dissolves and turns a golden color. Remove from heat and whisk in the cream and milk.
- Stir in the salt and vanilla extract.
- In a separate bowl, whisk the eggs until well beaten.
- Slowly add the warm caramel mixture to the eggs while whisking constantly.
- Pour the mixture into pudding cups and place them in a baking dish. Fill the baking dish with water halfway up the sides of the cups.
- Bake at 325°F (160°C) for 30-35 minutes until set.
- Let them cool, then refrigerate until fully set.
- Serve chilled, drizzled with extra caramel if desired.
