- 1 tablespoon olive oil
- 1 pound lean ground beef (90/10 or leaner)
- 1 large yellow onion, chopped
- 2–3 cloves garlic, minced
- 1 medium head of green cabbage, cored and roughly chopped or shredded
- 1 cup beef broth (low sodium preferred)
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon Worcestershire sauce
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- Salt and freshly ground black pepper to taste
- Optional: 1/4 teaspoon red pepper flakes
- Optional Garnish: Chopped fresh parsley or green onions
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned, about 5-7 minutes. Drain excess fat.
- Add the chopped onion and cook until softened, about 5-6 minutes. Stir in the minced garlic and optional red pepper flakes, cooking until fragrant.
- Add the chopped cabbage, beef broth, soy sauce, Worcestershire sauce, smoked paprika, and dried thyme. Stir gently.
- Simmer the mixture, cover, and let cook for 15-20 minutes until the cabbage is tender, stirring occasionally.
- Remove the lid and season with salt and black pepper. If needed, increase heat to evaporate excess liquid.
- Serve hot, garnished with parsley or green onions if desired.
Notes
This dish is flexible; adjust spices and vegetables according to your taste. Leftovers can be frozen for up to 2 months.
